Tamago's job is setting a price. He and Pekoms come round to collect the monthly sweets Fish-Man Island owes for Big Mom's protection, and he explains politely what happens to islands that fall behind. When Luffy offered treasure instead of candy, Tamago was the one who argued for taking it, since Eustass Kid had just sunk two of the crew's ships and they needed the money, and Big Mom called him brain-dead for looking for a compromise.
